Starch

  • Sweeteners

By the middle of the 20th century, enzymes were rapidly supplanting the use of strong acids in the manufacture of sweeteners. Before that time, the sulfuric acid was used.

Using enzymes have several benefits such as: products with higher quality, saving energy and safer workplace.

Novozymes provides different enzymes that can be used for producing various products from starch for example: Glucose, Fructose, Maltose, Maltodextrin and cyclodextrin (modified starch). These sweeteners can be used in nonalcoholic beverages, candy, jam, jelly and so other products.

  • High Fructose Corn Syrup (HFCS)

In 1970, the other sugar syrup was launched to the market that looked like sucrose. It was high fructose corn syrup (HFCS).

Today the production of HFCS is a major industry and increasingly is substituting sugar in Juice and nonalcoholic beverage production.

  • Enzymes as facilitators

Different starch sources such as: Corn, wheat,…can be used as raw material in sweeteners production.

Wheat is a highly complex raw material that constantly leads to disruptions in production, thus causing productivity losses. To minimize this risk, Novozymes has produced specific enzyme which efficiently facilitates filtration step. Also, in order to increase the efficiency in separation of starch, gluten, and fiber some other enzymes are introduced to be used in the decanter or the dough process, the enzymatic solutions ensure smooth and efficient processing.
