Enzymes in Bread

The main ingredients of many breads are similar to each other and are: flour, water, yeast and salt. Bakers may add other ingredients to their formulations such as sugar, salt, milk, eggs, nuts, some fruits and spices. But in the end, flour is the most important ingredient. Wheat flour due to its unique gluten-free properties allows the production of viscoelastic dough.
