Optimization of Maltodextrin production process using Termamyl 2-X alpha-amylase enzyme

Today, modified starch derivatives are widely used in the food industry. Types of these products are obtained from physical, chemical and enzymatic treatments of starch.

Maltodextrin is a polymer of sweet tasteless saccharides with an equivalence of dextrose of less than 20 and contains a mixture of molecular weight compounds between polysaccharides and oligosaccharides that is available as white powders or concentrated syrups. The main raw material that is widely used in the production of maltodextrin is corn starch.

Maltodextrin is more soluble in water than raw starch, is cheaper than most oral hydrocolloids, and has no taste or color solution. They are also used as a food additive due to their gel, consistency, texture, increase in viscosity, decrease in transition temperature, increase in high-temperature resistance, increase in dry matter, prevent crystallization, and control freezing temperature.

They can also be used as salad dressing, fillers, anti-lump agent, oxygen carrier, water retainer, and in special cases as a fat substitute.

Today, the acid hydrolysis method is less used to produce maltodextrin, and this method is generally used in the production of glucose syrup. In continuous production processes of hydrolyzed starch products, the enzymatic hydrolysis method has been evaluated as a much more effective acidic method

Also, products produced by the enzymatic method have more desirable characteristics based on the type of enzyme used and its specific function, and less undesirable substances are produced during the production process. There is also no need to remove unwanted salts (resulting from acid neutralization by acid hydrolysis). In addition, the enzymatic hydrolysis process is performed in a wider range of pH and at lower temperatures than the acid hydrolysis method. It is also more economical and more efficient. It also consumes less energy and is easier to control
